The cellar has three parts: a classic part with large oak barrels and a steel container for vinification and wine typing, a vaulted cellar with a spring of water with a constant temperature and humidity for French barrique barrels, and a less common cellar in which nine are dug into the ground 3,500-liter containers (kvevri) made of Georgian clay, made in the Georgian village of Imereti.
Growing in the Kabaj basement They fill between 60,000 and 70,000 bottles annually. All wines mature for at least one year in French barrels, and then for several months in bottles. Jean Michel Morel macerates white wines for at least one day, and ribula, the white queen of Bris, for about 30 days. In this way, the wine is structured by fruitiness (mainly its characteristic wine flower and grape taste), minerality and a typical golden color. Rebula grows in a bottle over the years, balances out and becomes velvety. Along with wine, Amfora Rebula most thoroughly and effectively represents the image of the Kabaj homestead, their view of wine and a respectful attitude to cultivation, taking into account the historical and natural conditions.
Culinary at the Kabaj homestead In the place where today the building stands above the large cellar, there was once a village inn. Here they drank homemade wine, offered tobacco and salt. They also threw balls in front of the inn.
Offering Briška food The mild climate and the landscape in the Goriška brde had a decisive influence on the cuisine. Different traditions (Slovenian, Friulian, Habsburg) intertwined on this piece of land, so "Briška" cuisine is something special. The recipes that our grandmothers carefully wrote down and jealously hid in their cookbooks charm even the most demanding gourmet. With good Briška wine, the dishes blend into a complete culinary pleasure that will remain in our memory for a long time. At the Kabaj homestead, we looked for old cookbooks and added a pinch of novelty, a pinch of the Mediterranean, a pinch of imagination and a pinch of novelty to the rich "Brika" kitchen.
